Ravioli with Apples and Walnuts

Another recipe from this month's Real Simple magazine. It was so quick, tasty and light ... perfect for a weeknight meal. The apples and walnuts add unique flavor and texture to premade ravioli.

Ingredients

  • 16 ounces cheese ravioli (fresh or frozen)
  • 2 tablespoons olive oil
  • 1/2 cup walnuts, roughly chopped
  • 1 large Braeburn or Gala apple, cut into matchsticks
  • 1/2 cup fresh flat-leaf parsley, chopped
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste

Steps

    Cook ravioli according to package directions.
  • 2
    Meanwhile, heat olive oil in medium skillet over medium heat. Add walnuts and cook stirring often until lightly toasted, about 4-5 minutes. Add apple, parsley, salt and pepper and toss to combine. Spoon over ravioli and sprinkle with Parmesan cheese.
