Soft cupcakes flavored with orange zest and blue moon. Topped with an orange cream cheese frosting!

  • 1/2 cup unsalted butter, soft
  • 1 cup brown sugar
  • 2 large eggs
  • 1/2 cup buttermilk
  • 3/4 cup Blue Moon™ beer
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon ground coriander
  • 1 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1 orange zest only


  • 8 ounces cream cheese, soft
  • 1/4 cup unsalted butter, soft
  • 5 cups powdered sugar
  • 1 teaspoon vanilla extract
  • 2 tablespoons Blue Moon™ (opt.)

    In the bowl of a stand mixer, or using a hand mixer, cream together butter and brown sugar for the cupcakes until smooth.

    Mix in one egg at a time.

    In a separate bowl, stir together buttermilk, beer, and vanilla. Also combine dry ingredients in yet another bowl.

    Add half the dry ingredients to the mixing bowl and stir to combine. Then stir in all the wet ingredients followed by the rest of the dry ingredients. Finish the batter by adding the orange zest.

    Scoop the batter into cupcake liners. You should get between 12-14 cupcakes. Bake cupcakes at 350°F for 16-18 minutes until a tester comes out clean from the center cupcakes.

    Remove cupcakes and let them cool completely before frosting.

    For frosting, whip together cream cheese and butter. Then add vanilla and powdered sugar, one cup at a time. Optionally, add a dash of beer although be careful not to add too much or the frosting might curdle.

    Frost cupcakes either with a knife or with a piping bag.

    Dust finished cupcakes with extra orange zest.
