An easy chicken and broccoli dish with a creamy sauce and topped with a cheesy breadcrumb topping. This is a great comforting dish!

  • We’ve been hit with a major cold front here in Florida. Usually people are quick to bust out their sweaters when it’s in the lower 70’s but I have to say it is legitimately cold. This morning it was in the lower 40’s which is probably the coldest it’s been the whole six years I have lived here. Last month, I was lucky enough to make a quick trip out to visit everyone at the Tablespoon headquarters in Minnesota and I had to buy a pair of closed-toed shoes just for the occasion. All this Florida girl owned were flip flops. Now I can relate more to all of you who have been trying to warm your bones. I was still in summer mode; grilling in my backyard and eating “summer foods” like salads and sandwiches. Now, I just want to curl up with some warm comfort food. This Broccoli Chicken Divan was bubbly when I took it out of the oven, and I couldn’t wait to dig in to warm me up. My family loves chicken, broccoli and cheese so this dish is sure to become a regular at our dinner table, even though this cold spell is not supposed to last long. Ingredients

  • 1 pound (16 ounces) broccoli
  • 1 1/2 cups cubed cooked chicken
  • 1/3 cup milk
  • 1/3 cup sour cream
  • 1 can (10.75 oz) cream of broccoli soup
  • 1 cup cheddar cheese, divided
  • 2 tablespoons butter, melted
  • 1/4 cup bread crumbs

    Preheat oven to 425°F.

    IIn a medium pot, place broccoli and boil for 5-6 minutes or until tender. Drain and place on the bottom of a deep 9-inch pie pan.

    Place cooked chicken on top of broccoli.

    Place cooked chicken on top of broccoli.

    Sprinkle remaining 1/2 cup of cheddar cheese over soup mixture.

    Mix melted butter and breadcrumbs and sprinkle over cheese.

    Bake for 15 minutes in the oven or until bubbly.
