Broccoli Pesto Braid

Ingredients

pound bag Cascadian Farm™ frozen organic broccoli florets
1/4
cup slivered almonds, toasted
2
cloves garlic, chopped
1/4
cup freshly grated parmesan cheese
1
pinch coarse salt and freshly ground pepper
1/4
cup extra-virgin olive oil
1
can (11 oz) Pillsbury™ refrigerated crusty French loaf

    Preheat oven to 350°F.
  • 2
    Thaw your broccoli florets in some warm water for just a few minutes. Drain and pat dry as best as you can.

    In a food processor, combine the broccoli, almonds, garlic, cheese, salt and pepper. With the motor running, add the oil in a thin stream, until you get a pesto consistency. Taste and add more salt if needed.

    Roll the loaf out into a square on a floured surface. Spoon the broccoli pesto down the center of the square.

    Using a small paring knife, cut little strips in the dough on either side of the pesto. Then go back and cut out every other strip, allowing for the pesto to be seen through the braid.

    Fold each strip over each other, creating the braid look.

    Slide onto a lightly greased, rimmed baking sheet and bake for about 25 minutes.

    Slice and serve!

I miss a good French braid.

I also miss Electric Youth perfume, Wilson Phillips and blue mascara, but I probably shouldn't have just typed that out.

I'll be straight with ya, some days when I'm working in the garden, working out or working for the weekend, I'll throw my hair in a dang french braid and high five myself.

WHAT ARE YOU GONNA DO ABOUT IT?

Oh you don't really care? Oh.

Shall we braid some bread then? Because I like braiding bread too. It's just like hair but it's yeast and not split ends. I need to stop talking.

Let me just say this, this simple Broccoli Pesto Braid is so festive for St. Patty's day, you're going to become uncontrollably braid happy and go on a massive braiding spree and probably end up sticking 27 shamrocks in your braided hair and life will be filled with such braided glee! I'm already so jealous of you.

Let's braid!

Gather your goods. We have Cascadian Farms organic frozen broccoli, Pillsbury Simply rustic French bread, some slivered almonds, cheese, garlic, salt and pepper. And some olive oil, not pictured. (it was having a bad hair day)

Thaw your broccoli in some warm water, for just a smidge. You'll drain it and then pat it out as dry as you can.

Toss it into a food processor with the almonds, garlic, cheese, salt and pepper. Add that oil aaaaaand….

Pesto! Or as my sister calls it, "paysto." I still haven't figured out how to handle this.

So check it, the loaf actually unfolds and you can roll it out into a square!

Dab the pesto down the center of it. You can use as much or as little as you prefer. I had leftover pesto, so I froze it for later use.

Then you make leetle slits in the dough on either side of the paysto. OH NO she's got me doing it now.

And then look, you go back and cut out every other little strip, like this. It looks like a cartoon character! Right? Something?

Then you overlap each little dough strip, like a braid!

And then whaaaaat is thaaaaaaat? I want to lick the top.

Here's the other side. It's like glamour shots! Oh I miss those too.

Look at that pesto. It's so wonderful you don't even know.

I can't even get over it.

And then we have to slice into it of course.

If I tell you that I ate over half of this braid while wearing Electric Youth perfume, blue mascara, shamrocks in my hair and Wilson Phillips in the background, will you hate me forever?

I knew you'd come around!
