Buckeye Eyeballs

Grab peanut butter, mix it with powdered sugar and make up a batch of these freaky little white-chocolate buckeye eyeballs. Delish and creepy all in one!

Ingredients

  • 1 1/2 cups creamy peanut butter
  • 1/2 cup butter, softened
  • 1 teaspoon vanilla
  • 4 cups powdered sugar
  • 1/2 block vanilla-flavored candy melt
  • 1 cup candy-coated chocolate pieces

Steps

    In a stand mixer, combine peanut butter, butter, vanilla, and powdered sugar until well combined. Use 2 teaspoon-fulls of dough for each ball. Transfer balls to a parchment-lined baking sheet, then refrigerate for 30-60 minutes.

    Melt vanilla candy melt in the microwave, stir until smooth.

    Insert a toothpick into a chilled peanut butter ball, dip into melted candy melt. Return to parchment paper, candy-melt side down, gently slide toothpick from the peanut butter. Repeat.

    Place a small dab of melted chocolate over the toothpick hole. Press a candy-coated chocolate piece over the melted chocolate. Refrigerate for another 30 minutes or so.

    Ingredient line-up! Just look at those beeee-autiful basic ingredients awaiting your makeover. Peanut butter, powdered sugar, vanilla-flavored candy coating and colorful candies. You'll also need butta. It's like butter, but you say it betta. Butta.

    Pop the peanut butter into a large bowl with the powdered sugar. Knead it up, baby! You knead a good, thick dough. You knead a good, boozy drink. You knead to stop reading this ridiculous play on words. I mean, for reals...

    Take about 2 teaspoons of your peanut buttery dough and roll it into peanut buttery balls. Pop in your fridge to firm it all up a bit.

    Now grab a toothpick or sucker stick. Gently press into the center of your peanut butter ball (heretofore called your buckeyeball), then dip it into melted candy melt. You can try to use white chocolate chips, but they can be notably finicky. So, just go easy, save yourself from all the fancy frou frou stuff and buy candy melt for dipping.

    Now dab a teensy bit of melted candy melt right over the top of the little toothpick hole on your buckeyeball (remember back when we called it a peanut butter ball? Yeah, we evolve like wildcats over here.) Press a candy-coated chocolate on top of the buckeyeball. Booyeah.

    Beware! When you put these on a plate, you may get the odd sensation that you're being watched!
