Chicken-Stuffed Waffles

Don’t feel like turning on the oven for dinner? Let your waffle maker do all the work with these chicken-studded waffles. And for a totally loaded take, top with a fried egg, bacon and avocado.

Ingredients

  • 2 cups Original Bisquick™ mix
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 1 egg
  • 4 tablespoons butter, melted
  • 4 green onions, thinly sliced on the bias, green and white parts separated
  • 1 teaspoon ground red pepper (cayenne)
  • 1 1/2 cups finely chopped cooked chicken
  • Vegetable oil
  • Real maple syrup

Steps

    In large bowl, mix Bisquick™ mix, broth, egg, 2 tablespoons of the melted butter, the green onion whites and red pepper. In small bowl, mix remaining 2 tablespoons melted butter and the chicken.

    Heat waffle maker; brush with vegetable oil. Pour 1/2 cup of the batter onto center of hot waffle maker. Sprinkle with 1/4 cup of the chicken mixture. Close lid of waffle maker.

    Bake 3 to 4 minutes or until steaming stops. Carefully remove waffle. Repeat with remaining batter and chicken. Top waffles with green onion greens, and serve with syrup.

    Don’t like spicy flavors? Leave out the ground red pepper – these waffles still have plenty of flavor.
