Cookies and Cream Brownies

Ingredients

  • 1 box (19.1 oz) Betty Crocker™ Delights Supreme Fudge Brownie Mix plus eggs, oil, and water for on the package
  • 13 creme filled chocolate sandwich cookies, divided
  • 1/2 cup butter, softened
  • 2 ounces cream cheese, softened
  • 2 1/2 cups powdered sugar
  • 1 teaspoon vanilla
  • 1 tablespoon milk

Steps

    Preheat oven to 350°F. Line a 9×9 inch baking pan with foil, and spray with nonstick cooking spray.

    Prepare brownie mix according to package directions. Crumble 8 of the creme-filled cookies and fold them into the prepared batter. Pour batter into the prepared pan and bake according to package directions. Let brownies cool.

    Beat the butter and cream cheese until fluffy with a mixer. Add the powdered sugar slowly, mixing together until combined. Add vanilla and mix until combined. Add milk to desired consistency.

    Crush remaining 5 creme filled cookies and fold them into the frosting.

    Remove brownies from the pan and frost cooled brownies. Cut and serve.

More About This Recipe

  • I’ve been sick for about a month now. I’m not sure if it’s a sinus infection or just a lingering cold but I actually lost my sense of smell for an entire day. It was awful. Not only could I not smell anything but I couldn’t taste anything at all. I should have taken advantage of the opportunity and eaten only raw vegetables all day -- a healthy route. But instead I ate things that I knew tasted good, like chocolate, just because I knew how good it was supposed to taste.

    Right before my tasting capabilities left, I made these gooey Cookies and Cream Brownies. Quite a way to say goodbye to food for a day, I must say. I guess if the last thing I ever tasted were these brownies, then that would be a good memory to hang on to.

    These brownies are easily made by adding crumbled cream-filled chocolate cookies to batter made from a brownie mix for a surprise crunch inside.

    Lather on a creamy light frosting with crumbled cookies folded in for an over-the-top cookies-and-cream flavor. These are my friends’ and family’s favorite so I hope you enjoy them as well.
