Easy Creamy Pasta with Broccoli

Ingredients

  • 1 tablespoon olive oil
  • 1/2 cup onions, diced
  • 1/2 cup red bell pepper, diced
  • 2 garlic cloves, finely chopped
  • 1 lb pasta
  • 3 cups Progresso™ chicken broth
  • 1 cup milk
  • 2 cups frozen broccoli
  • 1/2 cup butter
  • 1 cup heavy cream
  • 1 cup parmesan cheese

Steps

    Heat the oil in a large pot on medium heat. Add onions and pepper, sauté for 3-4 minutes or until the onion is aromatic and translucent. Add garlic and sauté, stirring for about 1 minute.

    Add pasta, chicken broth and milk to the same pot; mix well. Bring to a boil and cook for 8-10 minutes or until pasta is al dente and most of the liquid has reduced. Add broccoli and cook until broccoli is a little tender, about 2 minutes.

    Add butter, heavy cream and parmesan cheese; mix well. Cook for 2-3 minutes or until the cream thickens a little more.

    Serve immediately.
