Homemade falafel patties make perfect veggie burgers!

Ingredients

Falafel

  • 2 cans (15 1/2 oz) chickpeas
  • 2 jalapeños
  • 1 bunch spring onions
  • 1 clove garlic
  • 1/3 cup flour

Tzatziki

  • 1/2 English cucumber chopped small
  • 2 cups Greek yogurt
  • 2 tablespoons chopped parsley
  • 1 clove garlic minced
  • 1 tablespoon red wine vinegar

Other

  • Vegetable oil
  • 4 burger buns
  • Cucumber slices
  • Tomato slices
  • Lettuce
  • 1 teaspoon Tabasco™

Steps

    Mix the tzatziki ingredients and allow to sit in the fridge while preparing the rest of the meal.

    Strain and rinse the chickpeas. Lightly mash so there are no more whole chickpeas but it still has some texture. Add flour, diced jalapeno, diced spring onions, and minced garlic. Mix well.

    Fill pan with 1 inch of vegetable oil.

    Form burger patties with chickpea mixture and very lightly coat in flour.

    Fry in hot oil, flipping once, until browned on both sides.

    Serve on buns with tzatziki and veggies.

More About This Recipe

  • I love burgers, but sometimes I want a vegetarian option. I have explored many veggie burger varieties, but haven't found one I like. This falafel burger, on the other hand, is pretty fantastic and feels like you are eating a burger. The chickpeas have a meaty quality to them and are packed with protein too! Nice thick patties have the perfect mixture of crunch and creaminess as you bite into them. Enjoy!
