Ground Beef and Potato Tacos

Ingredients

  • 4 potatoes, diced
  • 3 ripe tomatoes
  • 1/2 cup onion, chopped
  • 1 clove garlic, minced
  • Drops of Tabasco sauce
  • Oregano and salt to taste
  • 1 lb ground beef
  • 5 corn tortillas
  • Shredded lettuce, to taste
  • Avocado slices, to taste

Steps

    Cook the potatoes in water with salt. Set aside.
  • 2
    Plunge the tomatoes in hot water for 1 1/2 to 2 minutes. Remove the skin and place in a blender. Add the onions, garlic, Tabasco, oregano and salt and blend until smooth. Transfer the sauce to a pan and simmer to thicken it, about 3 to 5 minutes. Set aside.

    Brown the meat in a pan, season with your favorite spices and add the potatoes. Stir well to combine all ingredients. Add a little bit of the tomato sauce and stir again.

    Heat the tortillas and fill with the meat and potato mixture.

    Serve the tacos with strips of lettuce, avocado slices and rest of the sauce on top.

More About This Recipe

  • These tacos are so delicious and easy to make that I like to prepare them frequently. I like serving them with slices of avocado and strips of lettuce to give them a fresh touch. The spice comes from the red sauce prepared with tomatoes, onions, oregano and a bit of Tabasco. Truly delicious!
