Martini-Inspired Panini

Ingredients

can (11 oz) Pillsbury™ refrigerated crusty French loaf

tablespoons extra-virgin olive oil

tablespoons mayonnaise
2
teaspoons vodka
1
teaspoon fresh lemon zest
4
or 5 thick slices pancetta, cut into thirds
1
cup arugula
10
olives, for garnish

    Preheat oven to 350°F. Arrange the bread dough seam-side down on a greased baking sheet. Bake for 23 to 28 minutes, or until golden brown. Slice bread into 1/2 inch slices, on the diagonal.

    In a small bowl, whisk together the mayo, vodka and lemon zest.

    Lightly brush one side of each bread slice with olive oil. Place the bread (oil side down) on a preheated indoor grill or panini maker, and layer with arugula, pancetta and a good drizzle of the vodka mayo. Place the other slice of bread on top, oil side up. Repeat as many times as you can to fit the sandwiches on the grill. Place another cast iron on top of the sandwiches (or lower the top of the panini maker) and grill for 3 minutes on each side. Or use a panini press!

    Garnish with olive-speared toothpicks and serve immediately.

  • Martini Panini? Hi, yes. 

    Even though I can't really partake in these baby beauts, IN MY CONDITION, I still wanted to stick a bunch in my purse.

    You know what I think? I think these should make their way to your Labor Day shindig. Or breakfast, you pick.

    You won't believe how simple and bonkers good this Martini-Inspired Panini is. Vodka + mayo + lemon zest + pancetta + arugula + Pillsbury French bread + olives on toothpicks? Seriously? 

    Invite me to your party. Oh wait, I still can't eat them. I'll smell them! That won't be weird at all, right?

    Alright! Start by baking your bread. Simple stuff. Unroll, score and stick her in the oven.

    Then slice the baked bread into 1/2 inch slices. Maybe a tad bit thicker. Whatever you want!

    In the meantime, make a vodka-infused mayo. With some lemon zest. I mean really.

    Whisk whisk.

    Then you'll just make some little sammies. Brush one side of each slice with some awl. I mean oil. Then layer with arugula, thick pancetta slices, and a good drizzle of the vodka mayo. Bam.

    Then throw them on a little indoor grill oorrrrr a panini press! I didn't photograph this because my grill is inanely heavy and I'm already carrying 40 thousand children in my belly.

    Voila. Martini panini, bambini.

    You're gonna need this at your next party, like I said. Or now.
