Whip up these easy little coffee cake minis, we say. Quick and simple, and requiring just a handful of basic ingredients you probably already have in your pantry, these delicious little cakes are what every cup of coffee dreams of being paired with. With as much buttery streusel on top as there is cake below, this recipe is everything you want when you’re craving coffee cake. Serve with giant mugs of coffee, of course. Pair with sliced oranges and fresh berries. A side of sausage rounds out the flavors nicely, as well.

Ingredients

Muffins

  • 2 cups Bisquick™ Pancake & Baking Mix Original
  • 2/3 cup milk
  • 1/3 cup brown sugar
  • 3 tablespoons melted butter
  • 1 egg

Streusel

  • 1 cup brown sugar
  • 1/2 cup Bisquick™ Pancake & Baking Mix Original
  • 4 tablespoons softened butter
  • 1 tablespoon cinnamon

Icing

  • 3/4 cup powdered sugar
  • 3 tablespoons milk
  • 1 teaspoon vanilla extract

Instructions

    Heat oven to 400°F. Line a 12-cup muffin tin with parchment liners.

    In a large bowl, stir together Bisquick™, milk, brown sugar, melted butter and egg called for in muffin ingredients.

    In a second bowl, mix together the brown sugar, Bisquick™, softened butter and cinnamon to form the streusel crumbles.

    Spoon 1 tablespoon of batter into the bottom of each muffin cup, followed by 1 tablespoon of streusel crumbles. Top cups with remaining batter, filling each cup evenly. Spoon remaining streusel on top.

    Bake 18 to 20 minutes, or just until the center of each muffin is set.

    In a small bowl, mix together powdered sugar, milk and vanilla. Drizzle over the top of warm coffee cakes.
