Parmesan Crusted Balsamic Roasted Broccoli

Ingredients

For the Parmesan Crust:

  • 1/4 cups Progresso™ Italian-style bread crumbs
  • 1/4 cup freshly grated parmesan cheese
  • 1 tablespoon olive oil

For the Broccoli

  • 3 crowns fresh broccoli
  • 2 1/2 tablespoons olive oil
  • 1 1/2 tablespoons Progresso™ balsamic vinegar
  • 1 1/2 teaspoons stone ground or dijon mustard

    Preheat oven to 425°F. Line a baking sheet with foil. Combine the breadcrumbs, Parmesan, and oil. Spread on the baking sheet and bake for 3-5 minutes, until crispy and golden. Set aside in a small bowl.

    Cut the broccoli into individual florets. In a medium bowl, whisk together the olive oil, balsamic vinegar, and dijon mustard. Add the broccoli, tossing to coat.

    Spread the broccoli out on the baking pan you already prepared for the breadcrumbs. Season to taste with pepper, if desired. Return the pan to the oven and roast for 5minutes, or until your preferred doneness is achieved.

    Remove the pan, sprinkle the breadcrumb mixture on top and return to the oven for 2-3 minutes. Serve immediately.
