Red Velvet Cookie Sandwiches

A fun twist on the favorite red velvet cake.

Ingredients

  • 1 box red velvet cake mix
  • 2 eggs
  • 1/2 cup unsalted butter
  • 1/2 teaspoon vanilla extract
  • 1 can Betty Crocker™ ready-to-spread cream cheese frosting

Steps

    Preheat oven to 350° F.

    Mix cake mix, eggs, butter, and vanilla together.

    Use a small cookie scoop to scoop balls of dough onto cookie sheet.

    Bake for 10-12 minutes.

    Allow cookies to bake completely.
  • 6
    Make sandwich by spreading one cookie with Betty Crocker™ cream cheese frosting and topping with a second cookie.
