A revived old-school cocktail in which the strong flavor of absinthe is balanced by orange bitters, with brandy and a light egg-white froth on top.

Ingredients

  • 1 large egg white
  • 1 ounce absinthe
  • 1 ounce brandy
  • 1 teaspoon superfine sugar or rich simple syrup
  • Blood dash orange bitters
  • Ice

Instructions

  • Step

    Combine egg white, absinthe, brandy, sugar or simple syrup, and bitters in a cocktail shaker, then fill the shaker with ice. Shake vigorously until condensation beads up on the outside of the shaker, at least 30 seconds. Strain contents into a wineglass and serve.
