Cold weather means squash season, and we’re totally here for that with these crispy, party-ready spiced fritters. Transform plain butternut squash with ginger, coriander, cumin, cayenne and a creamy dollop of tangy topping into a delightful veggie-based app that’s ready to serve in half an hour.

Ingredients

Fritters

  • 3 cups butternut squash spirals, coarsely chopped (about 10 oz)
  • 2 green onions, chopped
  • 1/2 teaspoon finely chopped gingerroot
  • 1/4 cup Gold Medal™ all-purpose flour
  • 1/2 teaspoon ground coriander
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/4 teaspoon ground red pepper (cayenne)
  • 1/4 teaspoon baking powder
  • 1 egg, slightly beaten
  • 1 cup vegetable oil

Topping

  • 1 container (5.3 oz) YQ by Yoplait™ plain
  • 1 teaspoon lime juice
  • 1/2 teaspoon honey
  • 1/8 teaspoon salt
  • 2 tablespoons chopped green onions

    In large bowl, mix all Fritter ingredients except oil; stir to completely blend.

    In 10-inch skillet, heat oil over medium-high heat until hot. Working in batches, scoop 1/4 cup of the squash mixture into oil, and flatten slightly. Repeat to fill skillet. Cook 2 to 3 minutes on each side, turning once, until deep golden brown. If browning too fast, reduce heat to medium. Transfer to paper towel-lined plate. Repeat to use up mixture.

    Meanwhile, in small bowl, mix YQ, lime juice, honey and salt; stir to blend into topping.

    Top fritters with topping and green onions. Serve immediately.
