Sundried Tomato Spread

Serve this tasty spread with thin slices of French bread. If desired, drizzle with a little good olive oil just before serving.

Ingredients

  • 1/4 cup olive oil
  • 2 cloves garlic, crushed
  • 2 tbsp chopped basil
  • 1/4 cup sundried tomatoes, chopped
  • 2 cans Great Northern beans, drained and rinsed
  • Salt and pepper

Steps

    Heat olive oil in a medium saucepan over medium heat.
  • 2
    Add garlic, basil and sundried tomatoes and reduce heat to low. Simmer for five minutes.

    Add the beans and toss to coat. Transfer the mixture to the bowl of a food processor.

    Pulse until well combined.
  • 5
    Serve with thin slices of french bread.
