Turkey Lettuce Wraps

Need dinner in a hurry? Or lunch in a jiffy? Or just some food in your belly ASAP? No matter what time of day you’re feeling hunger pains, these easy turkey lettuce wraps can be ready in just 15 minutes—they’re almost as easy to make as they are tasty to eat.

Ingredients

  • 1 pound ground turkey
  • 3 cloves garlic, minced
  • 1 red bell pepper, finely diced
  • 1 (4 oz) can water chestnuts, drained and finely diced
  • 2 carrots, finely diced
  • 3 tablespoons hoisin sauce
  • 2 scallions, finely diced
  • 1 pinch coarse salt and freshly ground pepper
  • 1 tablespoons soy sauce, to drizzle
  • 1 head butternut or Boston lettuce, leaves separated

Steps

    Heat a skillet over medium-high heat. Add turkey to the pan and cook, breaking up with a wooden spoon until browned, about 6 minutes. Season with salt and pepper.

    Add garlic and sauté for 1 minute. Add the red bell pepper, carrots and water chestnuts and sauté for 4 minutes. Add hoisin sauce and stir to coat.

    Spoon the turkey mixture into each lettuce cup. Garnish with scallions and drizzle each with a dash of soy sauce. Serve immediately.

    Change this recipe up by substituting the ground turkey for ground chicken or beef.

    Lettuce cups are great for make-ahead lunches. After cooking the turkey-hoisin mixture, store it separately from the lettuce leaves in the refrigerator. Then when it’s time to eat, simply heat up the turkey mixture and assemble your lettuce wraps.
