Yeast Pancakes

This unique pancake batter is yeast-based and rises before you cook the pancakes on a griddle.

Ingredients

  • 3 cups warm milk
  • 2 teaspoons yeast
  • 3 eggs
  • 1 teaspoon salt
  • 1/4 cup oil
  • 3 cups flour

Steps

    Combine warm milk (lukewarm, not hot) and yeast. Let stand so yeast activates.

    Combine all ingredients, adding milk/yeast and dry ingredients alternately. Mix with electric mixer until batter is smooth.

    Place batter in a large pan or bowl with enough room for batter to rise. Cover with a towel. Let batter stand in a warm place until bubbly, about an hour, stirring once about half way.

    Cook pancakes on oiled griddle. ENJOY!

    Note: Leftovers can be refrigerated and reheated in the microwave later. Great kids snack with peanut butter!

    This recipe will feed a family of four. I double it for my family of six and have leftovers for quick weekday breakfasts or after-school snacks. Wonderful with maple syrup or blueberry syrup!
