Zesty Corn with Chili Powder

Adapted from Bobby Flay's delicious dish that features fresh grilled corn, creme fraiche, cojita cheese and cilantro, I created this version with ingredients I had on hand in my kitchen. It's amazing! MORE + LESS -

Ingredients

cups frozen corn

tablespoons canola oil
1/4
cup sour cream

lemon, juiced and zested

tablespoon chili powder
2
tablespoons fresh basil leaves, finely chopped
1/4
cup grated Italian cheese (parmesan or a blend)
Freshly ground pepper and salt to taste

    In large skillet, heat oil. Add frozen corn kernels and cook, stirring constantly, until heated through.

    Add remaining ingredients, Mix thoroughly. Serve immediately!
