These pistachio cupcakes have an amazing taste as well as a fluffy texture due to a secret ingredient. 18 frosted cupcakes

box of Betty Crocker white cake mix

(3.5 ounce) packages instant pistachio pudding
1
cup vegetable oil

large eggs
1
cup club soda
2
cups heavy cream
1/3
cup white sugar

Directions

  • 1 Preheat oven to 350 degrees and place cupcake liners in cupcake pan.
  • 2 Mix cake mix, eggs, oil, 1 package pistachio pudding, and club soda in a large bowl and beat for 3 minutes.
  • 3 Pour into cupcake liners about 2/3 of the way full and bake for 18-22 minutes.
  • 4 Cool cupcakes completely.
  • 5 In a small bowl add cream and white sugar and beat until soft peaks form.
  • 6 Add remaining 1 package of pistachio pudding and mix until incorporated.
  • 7 Frost cupcakes with pistachio cream mixture and store in the refrigerator until serving.
