    Ingredients

    • 1 envelope dry active yeast
    • 1 1/2 cup warm water
    • 1 tbsp granulated sugar
    • 4 cups all-purpose flour
    • 1/2 tsp kosher salt
    • 1 pkg cocktail franks
    • 1 large egg (white only)
    • sea salt or course salt

    Directions

    1. 1Preheat oven to 425 degrees. Line a baking sheet with parchment paper.
    2. 2In a large bowl, sprinkle the yeast into the warm water and let sit until dissolved, about 2-3 minutes. Stir the sugar into the water until dissolved.
    3. 3Add the flour and salt to the bowl and stir to combine. The dough will be crumbly. Turn the dough out onto a floured board and knead with floured hands until smooth.
    4. 4Divide the dough into four portions. Working with one at a time, roll them into long ropes (about 3/4-inch thick). Then, cut into 1 1/2 inch portions.
    5. 5Flatten one portion of dough at a time, and place a cocktail frank in the middle, rolling the dough around it. Place onto the prepared cookie sheet, leaving about 1/2 inch between each piggie.
    6. 6Once all the cocktail franks have been rolled in dough and placed onto a cookie sheet (you might need two sheets), lightly beat the egg white. Then, brush the tops of all the pigs in a blanket. Sprinkle liberally with sea salt or course salt.
    7. 7Bake the pigs in a blanket for 14-16 minutes, until golden and cooked through. Serve.

    These are delicious! Make sure to spray the parchment paper with oil first, or the dough will stick to it.

    And they aren't really pigs in blankets. 'Pigs' are pork sausages and the blankets are bacon rashers. Kosher salt doesn't really go with pork sausages and bacon!!

    CookieB, I believe they are called that because the dough the sausages are wrapped in is similar to the dough used for soft pretzels.
