Chickeny pockets of bitey bliss. The end.
This here mess is some serious business. Not serious as in how hard it is to make, because, hi, do you know me at all? Shortcut Sally. But serious as in how incredible it is to either a) bite into or b) pull apart these lil' bites of seriousness.
They're perfect on so many levels. All the after-school snack levels. All the lock yourself in the bathroom with a platter of these and a bottle of prosecco levels. All the levels.
Just little Pillsbury crescent roll ball thingies stuffed with chopped chicken, green chiles, lil' bit of mayo, taco seasoning, cilantro and LOTS OF CHEESE. Sorry to scream.
I mentioned how serious these are, right?
Okay! Start by shreddin' up a rotis. Easy sneezy.
Then give it a really good chop. You don't think it will make much difference, BUT IT DOES. I can't stop yelling at you.
Then in a bowl, whisk together a few tablespoons of mayo, Old El Paso taco seasoning and diced green chiles. Ridic.
Then mix the mayo with the chicken and toss toss. Add some cilantro. Goodness gracious.
And cheese. Never stop.
Now roll out the crescent dough triangles and place a 1-inch chicken meatball in the corner of each triangle.
Then just roll the dough up around the chicken and pinch it together to seal! Diddly done.
Baked. Glory be.
The insides. Hallelujah.
The close up. Oh hi, beautiful.
Dip in some mayo/lime juice/taco seasoning that you made while you were crying for these to finish baking.
Bev cried. No, she actually did. For more musings, visit her blog at Bev Cooks and her Tablespoon profile.
