Strawberry-Banana Breakfast Quinoa

I’m always looking for a healthy breakfast that's easy to cook and doesn't bore my taste buds.


On top of that, I happen to be car-less for the month of June, so I need all the protein I can get in the morning for the long bike commute to work!

This breakfast was exactly what I needed.  Quinoa is filled with protein, but it’s much healthier than eating a couple of eggs because you don’t get all that saturated fat and cholesterol.

On top of everything else, I like to call it straw-na-wa, so that’s fun

Try this Strawberry Banana Breakfast Quinoa next time you wake up and really need to conquer the day.

It’s easy to make this for any amount of people.  The recipe listed below is for two.

It’s finally strawberry season up here in New England, and these farmers market strawberries were fantastic.

Fruit mixed in toward the end of cooking

Most people would just put the fruit on top, but I like to mix a little in towards the end of cooking to really get the flavor throughout.

Strawberry-Banana Breakfast Quinoa

Ingredients

Cup Quinoa
2
Cups Milk
1
Tablespoon Brown Sugar
1
Banana

Strawberries

Directions

  • 1 Mix the milk, quinoa, and sugar in a saucepan and bring to a simmer. Lower heat and simmer for about 20 minutes until quinoa is cooked and milk is absorbed.
  • 2 Dice up half the banana and strawberries and about 3/4 of the way through cooking stir them into the quinoa.
  • 3 After quinoa rests about 5 minutes, spoon into bowls and top with remaining sliced fruit.
