Ingredients

  • 1 cup quinoa (rinsed)
  • 2 cups milk
  • 1 tablespoon brown sugar
  • 1 banana
  • 10 strawberries

Steps

  • 1
Mix the milk, quinoa, and sugar in a saucepan and bring to a simmer. Lower heat and simmer for about 20 minutes until quinoa is cooked and milk is absorbed.
  • 2
Dice up half the banana and strawberries and about 3/4 of the way through cooking stir them into the quinoa.
  • 3
After quinoa rests about 5 minutes, spoon into bowls and top with remaining sliced fruit.

Expert Tips

  • tip 1
Don’t skip on rinsing the quinoa. Quinoa is coated with a bitter protective layer called “saponin.” It helps keep birds at bay, but also makes it taste rather nasty. Use a fine-mesh strainer to rinse the quinoa under cool water before cooking. Though most companies “polish” or prewash packaged quinoa, it’s still a good idea to give it a good wash before cooking, just to be sure.
  • tip 2
Switch out the strawberry and bananas for other fruits like blackberries, blueberries or raspberries.
