The first step to groovy gourmet strawberries is to work in small batches. I like to grab some good-quality dark and white chocolate chips, then toss them into 1/2-cup sized recyclable plastic containers. This way, you've got a deep well for dipping, and you can toss the container when you're done, so no messy clean up!
Home-dipped strawberries are best served within a couple of hours of dipping. They should be stored in a cool, dry place for up to 3 hours, then can be transferred to the fridge and stored there for up to 12 hours. Store them too long and the fruit will begin weeping, so preparing the strawberries just before needed is the best way to ensure a high-quality product.
