large strawberries, washed and air-dried

cup good quality dark chocolate chips

cup good quality white chocolate chips

teaspoon coconut oil

    Place 1/2 cup of white chocolate chips and 1/2 teaspoon of coconut oil in a small, microwaveable container (try a 1/2 cup sized reuseable plastic container.)

    Microwave the chips for 30 seconds, remove and stir. Return to the microwave for an additional 20-30 seconds, zap then stir until smooth.

    Dip clean, dry strawberries into the chocolate at an angle, so one half of the strawberry is coated with white chocolate. Transfer strawberries to a large piece of parchment paper. Allow chocolate to harden.

    Place 1/2 cup of dark chocolate chips and 1/2 teaspoon of coconut oil in a small, microwaveable container (try a 1/2 cup sized reuseable plastic container.)

    Microwave the chips for 30 seconds, remove and stir. Return to the microwave for an additional 20-30 seconds, zap then stir until smooth.

    Dip the other half strawberries in the dark chocolate at a diagonal. Allow any excess chocolate to drizzle off before transferring strawberries to parchment.

    Sprinkle dark chocolate side of strawberries with sprinkles. Allow to harden completely before serving. Serve immediately, or store in the fridge for up to 12 hours, if needed.

    Repeat the above process with the second half of the chocolate chips and coconut oil. Working in small batches is the best way to have perfect strawberries!

I like to grab some good-quality dark and white chocolate chips, then toss them into 1/2-cup sized recyclable plastic containers. This way, you've got a deep well for dipping, and you can toss the container when you're done, so no messy clean up! Home-dipped strawberries are best served within a couple of hours of dipping. They should be stored in a cool, dry place for up to 3 hours, then can be transferred to the fridge and stored there for up to 12 hours. Store them too long and the fruit will begin weeping, so preparing the strawberries just before needed is the best way to ensure a high-quality product.
