Bright and zingy, this dressing tastes incredible on any green salad. Or serve it as a dip for veggies. It’s even great drizzled over soba noodles for a deliciously quick Asian-inspired dinner dish.

Ingredients

  • 1/2 cup sliced carrots
  • 1/4 sweet onion
  • 2-inch piece fresh ginger, peeled and sliced
  • 2 tablespoons mellow white miso (or tahini)
  • 1/4 cup rice vinegar
  • 2 tablespoons toasted sesame oil
  • 1/4 cup liquid coconut oil, canola or grapeseed oil

Steps

    In a high-speed blender, combine carrots, onion, ginger, miso and vinegar. Puree until smooth. Add oils, blending until well combined.

    If a thinner consistency is desired, add 1-2 tablespoons water.
