Cheddar Grits with Canadian Bacon for Two

Grits go from good to great in this 10-minute breakfast for two. We’d love to take the credit for the amazing flavor, but we think it might have more to do with the cheese and Canadian bacon than with us. And we’re okay with that.

Ingredients

  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 1 cup milk
  • 1/2 cup quick-cooking corn grits (not instant)
  • 1/2 cup shredded white Cheddar cheese (2 oz)
  • 3 slices (about 2 oz from 6-oz package) Canadian bacon, chopped
  • 1 tablespoon sliced green onions
  • Hot sauce, to taste, if desired

    In 2-quart saucepan, heat broth and milk to boiling over medium-high heat.

    Beat in grits with whisk; reduce heat to low. Cook 4 to 5 minutes, stirring occasionally, until thickened. Stir in cheese and Canadian bacon. Divide between 2 serving bowls; top with green onions and hot sauce.
