  • 3 Slices whole wheat bread, crusts removed and quartered
  • 12 Small circular slices of fresh mozzarella cheese
  • 6 Anchovies, halved
  • 2 Roma tomatoes, sliced thinly
  • 2 Tablespoons freshly chopped parsley, for garnish

    Preheat oven to 425°F.
  • 2
    Arrange the bread squares on a rimmed, ungreased baking sheet. Pop it into the oven for 5 minutes. It will get the bread a little toasty.

    Layer the cheese slices on top of each bread square. Followed by an anchovy half, and a tomato slice.

    Bake for about 12 minutes, or until the cheese has melted and the tomatoes are good and roasted. If you need to switch the oven to broil a few minutes, that's fine.

    Serve garnished with chopped parsley!
