Cheesy Canapés with Roasted Tomatoes and Anchovies

Ingredients

Slices whole wheat bread, crusts removed and quartered

Small circular slices of fresh mozzarella cheese

Anchovies, halved

Roma tomatoes, sliced thinly

Tablespoons freshly chopped parsley, for garnish

    Preheat oven to 425°F.
  • 2
    Arrange the bread squares on a rimmed, ungreased baking sheet. Pop it into the oven for 5 minutes. It will get the bread a little toasty.

    Layer the cheese slices on top of each bread square. Followed by an anchovy half, and a tomato slice.
  • 4
    Bake for about 12 minutes, or until the cheese has melted and the tomatoes are good and roasted. If you need to switch the oven to broil a few minutes, that's fine.

    Serve garnished with chopped parsley!
