Easy homemade poppy seed dressing brings together pasta, lots of chicken, fresh cucumbers and sweet grapes. MORE + LESS -

Ingredients

(16 ounce) package pasta (such as shells, penne or rotini)

cups cubed cooked chicken

whole Hothouse cucumber, chopped

cup red grapes, halved
1/4
cup sugar
3/4
teaspoon mustard powder
1/2
teaspoon salt

tablespoons apple cider vinegar
1/3
cup olive oil
1
tablespoon poppy seeds

    Bring a large pot of salted water to a boil then cook pasta according to package directions. Drain then rinse under cold water until cool.

    Add pasta, chicken, cucumber and grapes to a bowl.

    Make the dressing by whisking together the sugar, mustard powder, salt, vinegar, olive oil and poppy seeds until blended. Pour dressing over pasta and toss.

    Cover and refrigerate at least 15 minutes. Serve.

Second, there aren’t any ingredients that really bite back – no onions, no pickles and definitely no capers.

Third, we built it from ingredients that we know most people really enjoy like sweet red grapes, refreshing crisp cucumber and -- to make even the skeptics buckle -- some tender roasted chicken.

The dressing? We kept it simple but special with our homemade poppy seed dressing. No goopy mayo needed -- another win for warm-weather gatherings.

To make it, you’ll need sugar, mustard powder, apple cider vinegar, olive oil and poppy seeds. We make our dressing on the sweeter side, but feel free to play around with the amount of sugar for one that’s a little less sweet and to your taste.
