box Betty Crocker™ Suddenly Pasta Salad™ classic pasta salad mix

tablespoons cold water

tablespoons olive oil

cup plain Greek yogurt

teaspoon fresh lemon juice
1
tablespoon chopped fresh dill weed

cup chopped cucumber
1/2
cup quartered grape tomatoes
1/3
cup pitted whole kalamata olives
1/4
cup chopped red onion
1/4
cup crumbled feta cheese
1/4
cup Progresso™ marinated artichoke hearts, chopped (from 6-oz jar)

    Fill 3-quart saucepan 2/3 full of water; heat to boiling. Add pasta (from salad mix box). Gently boil uncovered 12 minutes, stirring occasionally; drain. Rinse with cold water; drain well.

    Meanwhile, in large bowl, stir together seasoning mix (from salad mix box), 3 tablespoons cold water and the olive oil. Stir in Greek yogurt, lemon juice and fresh dill weed.

    Stir cooked pasta, cucumber, tomatoes, olives, onion, feta cheese and artichoke hearts into dressing mixture. Serve immediately, or cover and refrigerate.

Expert Tips

  • If desired, stir in a few teaspoons more olive oil to moisten refrigerated salad.
  • Add chopped cooked chicken to make this pasta salad into a full meal.
