Fresh and flavorful, this cilantro-lime dressing is ideal for drizzling on top of any salad, stir-fry or veggie side dish where Tex-Mex flavor is welcome.

Ingredients

  • 3-4 fresh limes, juiced and zested (about 1/2 cup)
  • 1/2 cup fresh cilantro leaves, chopped, lightly packed
  • 1/2 cup olive oil
  • 2-3 tablespoons honey (depending on desired sweetness)
  • 1 tablespoon Greek yogurt (optional)
  • Salt and pepper to taste

    In a high-speed blender, combine all ingredients until smooth.

  • What is it about cilantro that makes us want to sprinkle it on top of everything? If you find a recipe that calls for coriander, that’s actually just another name for cilantro—at least in the United Kingdom. It also goes by Chinese parsley. In the United States, coriander refers to the plant seed and cilantro refers to the leaf part of the plant. If you’re on the cilantro-everything train like we are, this dressing can be used on everything! If you’re not a fan of cilantro, don’t count this recipe out.
