Colombian Ají Sauce

Ingredients

ripe tomato, diced in small cubes

cup chopped cilantro

ají pepper or habanero chili pepper (finely chopped and seeded)
1/2
stalk chopped green onion
1/4
cup white vinegar

tablespoons water
Salt and pepper to taste
Lemon juice drops (optional)

    Combine all finely chopped ingredients in a deep bowl.

    Check the seasoning and if desired, you can add a few drops of lemon juice.

    Refrigerate for at least 20 minutes for the mix of flavors to intensify.

  • If you don't have ají or habanero peppers at hand, a few drops of Tabasco can be used as a spicy substitute.
