Our local Trader Joe’s™ kept selling out of their classic pancake-inspired loaf, so we said, “Hey—let’s make our own.” With authentic buttermilk flavor, there’s no wrong way to eat this streusel-topped bread. Slice it up and smother it in butter like a classic stack, top a thick slice of the loaf with bacon and a sunny-side up egg for the world’s best open-faced sandwich, or simply chow down with a good cup of coffee on the side. Ingredients

Pancake Bread

cups Original Bisquick™ mix
1/2
cup granulated sugar
1/2
cup buttermilk

tablespoons butter, softened

teaspoon maple extract
1/2
teaspoon vanilla

Streusel

1/3
cup Original Bisquick™ mix
1/3
cup packed brown sugar
1/2
teaspoon ground cinnamon
2
tablespoons butter, softened

    Heat oven to 325°F. Grease bottom and sides of 8x4-inch loaf pan with shortening. Lightly flour.

    In large bowl, beat Pancake Bread ingredients with electric mixer on low speed 30 seconds, scraping bowl constantly. Beat on medium speed 4 minutes, scraping bowl occasionally. Pour into pan.

    Bake 30 minutes.

    Meanwhile, in medium bowl, stir Streusel ingredients with fork until crumbly.

    Carefully sprinkle streusel over top of partially baked bread. Bake 25 to 30 minutes or until toothpick inserted in center comes out clean. Cool 15 minutes. Loosen sides of loaf from pan; remove from pan, and place top side up on cooling rack. Cool completely, about 1 1/2 hours.

Expert Tips

  • Sprinkling the brown sugar streusel over the top of the loaf after it’s been partially baked will ensure the streusel won’t sink to the bottom of the loaf as it bakes.
