More About This Recipe

  • One thing I love about my husband is that he’s always trying to help me out in my daily errands. His work is right next to Costco, so he will often call me on the way home from work and ask if I need him to pick up anything. I jump on the chance because going to Costco with three kids is about as much fun as going to the dentist. Usually I give him a list of chicken, cheese, and apples. Okay, who are we kidding? The list also usually includes brown sugar, cream cheese, and chocolate chips. What I love is that he always gets everything on the list as well as a couple of random surprises like ice cream sandwiches or a year supply of dental floss. One time he came home with a blender so powerful it can blend a golf ball or even an entire golf club. Hmm…I’m thinking I may have to test it when golf season rolls around and my husband goes missing on the golf course for a couple of months. During his last Costco visit, his bonus item was a huge bag of dried cranberries. Our family likes to add them in our salads every once in a while but I thought, "What on earth am I supposed to do with all of these cranberries?" So that’s how these Cranberry, Orange, and Pecan Roll-Ups came to be. Cream cheese with cranberries, pecans, and a hint of orange zest all snuggled up in a buttery crescent roll. Just combine the filling, place about a tablespoon on the center of each crescent, and roll it up. These would be great for breakfast or dessert and they take less than 20 minutes.
