More About This Recipe

  • We go through a lot of apples in my house. Second only to bananas, the kids, my husband and I snack on them, and love the sweet crunch. And then there is that old saying about “An apple a day … “ -- I swear I hear the words in my head every time I pick one up.

I digress. This isn’t about apples or old sayings. It’s about dessert. And when it comes to making a quick and easy dessert, those apples are a perfect starting point.

The question is what do you do with them? Apples are great in so many desserts from cakes to turnovers to tarts. You can mix ‘em up with spices like nutmeg, cinnamon or cardamom. Or you could toss in a little savory flavor (cheddar cheese sounds good!). Heck, you can even freeze apple sauce and get a fab granita.

But for this dessert, I looked to the pie world. Crunchy Apple Bake is like a miniature apple pie, sans the crust.  Instead of a lattice top or streusel, these little pots of apple goodness are topped with something fabulous: crushed Honey Nut Chex.

It lends a fabulous sweet and salty combination to the dish. I don’t know about you, but sweet and salty kind of elevate a dessert to heavenly status for me … How about you?
