Ingredients

radishes, sliced

cups watercress, rinsed and roughly chopped

large avocado, chopped
1/3
cup cooked corn

green onions, chopped

large lemon, juiced
1/4
cup brown rice vinegar

teaspoon furikake

    In a large bowl, combine radishes, watercress, avocado, corn, onions lemon juice and rice vinegar. Toss until all ingredients have combined. Top with furikake and serve.

Expert Tips

  • Furikake is a Japanese seasoning comprised of chopped seaweed, black sesame seeds and ground fish. If furikake is not available in your area, top with black sesame seeds and 1/4 teaspoon sea salt instead.
  • Add cooked tofu or shredded chicken to this easy watercress salad for a complete and filling lunch.
