We’ve condensed the entire season of spring and turned it into a fresh, crispy salad. Okay, not literally—but one bite of this easy watercress salad and you just might be feeling the sun on your face and the grass beneath your toes.

Ingredients

  • 4 radishes, sliced
  • 2 cups watercress, rinsed and roughly chopped
  • 1 large avocado, chopped
  • 1/3 cup cooked corn
  • 2 green onions, chopped
  • 1 large lemon, juiced
  • 1/4 cup brown rice vinegar
  • 1 teaspoon furikake

Instructions

    In a large bowl, combine radishes, watercress, avocado, corn, onions lemon juice and rice vinegar. Toss until all ingredients have combined. Top with furikake and serve.
