Brussels Sprouts Salad with Kale and Radishes

Ingredients

  • 1 bag (15 units) Totino’s™ Pizza Rolls™ triple cheese frozen pizza snacks
  • 2 cups Brussels sprouts
  • 1 large bunch kale, without the central stem
  • 2 small shallots, peeled
  • 2-3 radishes, peeled and thinly sliced
  • 1/2 cup toasted pine nuts
  • 1/4 cup Parmesan cheese, grated

For the dressing:

  • 1/2 cup olive oil
  • 1/4 cup fresh lemon juice
  • 2 tablespoons Dijon mustard
  • 1 small garlic clove, finely chopped or grated
  • Salt and freshly ground black pepper, to taste

Steps

    Cook the Totino’s™ Pizza Rolls™ according to package instructions.

    Use a food processor with a fine slicing attachment to slice the Brussels sprouts. Thinly slice the kale and shallots. Transfer everything into a large salad bowl. Add the radishes and mix to combine.

    Prepare the dressing by mixing all the ingredients together.

    Add the dressing to the salad, sprinkle on the toasted pine nuts and parmesan cheese.

    Serve with Totino’s™ Pizza Rolls™.
