Fresh Fruit Salad

Ingredients

cups fresh cantaloupe balls or cubes

cup fresh honeydew melon balls or cubes
1
cup fresh raspberries
1
cup fresh strawberries, sliced
1/3
cup orange juice
1
tablespoon balsamic vinegar
1/3
cup white wine
1
tablespoon fresh minced (or finely chopped) ginger root or candied ginger

    In a large bowl, prepare melon balls (or cubes). Add strawberry slices and raspberries.

    In a small saucepan, brown ginger over medium heat. (Be careful not to burn.) Add wine and bring to a boil. Cook until liquid is reduced by half, stirring constantly. Remove from heat. Add orange juice and balsamic vinegar, stirring to mix. Allow to cool (approximately 15 minutes).

    Allow juice to cool. Pour over fruit, and gently mix fruit to coat. Place in a covered container and refrigerate an hour. Before serving, spoon juice over fruit to freshly coat and moisten.

Expert Tips

  • Use raspberry vinegar instead of balsamic vinegar. Add a squirt of freshly squeeze lemon juice and/or lemon zest if desired.
