Frosted Brown-Sugar Pecan Cookies

Made with yogurt and pecans, and iced with sweet powdered-sugar frosting, these cookies are perfect for a coffee break or dessert. MORE + LESS -

Ingredients

to 1/2 cups dark brown sugar, packed
1/2
cup butter-flavored shortening

large eggs
1
cup vanilla flavored yogurt
1
teaspoon vanilla
1
cup chopped pecans
1
teaspoon baking soda
1/2
teaspoon baking powder
1/2
teaspoon salt
2
-1/2 -1/2 cups flour
Butter frosting (recipe below)

    Preheat oven to 357° F.
  • 2
    In large bowl, beat shortening and brown sugar until smooth. Add eggs, yogurt and vanilla and mix until well blended. Add remaining ingredients.

    Drop by rounded spoon onto greased cookie sheets. Bake at 357° F for 10 minutes, until edges are golden brown. Transfer to wire cooling rack to cool completely.

Expert Tips

FROSTING: Melt 1/2 cup butter and add to 3-1/2 cups sifted powdered sugar. Stir. Add 5 tbsp boiling water. Stir until smooth. Add 1 tsp vanilla. Frost each cookie, immediately adding a pecan half if desired. (If frosting becomes hard to work with, add additional boiling water, a tsp at a time.)
