Turn any day into a Friday the 13th celebration with this uber-freaky-good, and totally unique approach to White Chicken Chili.

Ingredients

  • 1 tablespoon olive oil
  • 1 small white onion, chopped
  • 1 teaspoon minced garlic (or two cloves fresh garlic, chopped)
  • 2 cans (5 oz) cooked chicken
  • 1 can (4 oz) Old El Paso™ Chopped Green Chiles
  • 1 1/2 cups frozen white corn
  • 2 cans lite coconut milk
  • 2 cans white Northern beans
  • White pepper to taste
  • Salt to taste
  • 1 cup Monterey Jack cheese, for garnish
  • 1/4 cup chopped cilantro

Steps

    In a large pot, heat olive oil over medium high heat.

    Add onions and garlic and cook until softened.

    Add chicken, chilies, corn, coconut milk, and beans to the pot. Heat until steaming.

    Season with salt and pepper.

    Top with shredded Monterey Jack cheese and cilantro.

    Serve and enjoy!
