Ingredients

  • 2 packets unflavored gelatin
  • 1 cup water
  • 1/2 cup Irish cream liqueur
  • 1/4 cup cinnamon schnapps
  • 1/4 cup vodka, whipped cream flavored
  • 1/4 teaspoon pumpkin pie spice
  • 3 tablespoons gingerbread syrup (like what goes in coffee)*
  • 1/8 tub (16 oz) Betty Crocker™ Rich & Creamy Creamy White Frosting
  • 1 packet Red Hots™ candies

    Sprinkle gelatin over cold water in a medium saucepan and let sit for 5 minutes to bloom.

    Heat over low until gelatin melts.

    Add gingerbread syrup and spices.

    Let cool for 5 minutes.

    Add the liqueurs and vodka.

    To make things easier, pour the mixture into a squeeze bottle. This will make fitting them into the molds easier.

    Spray molds with baking spray and wipe away excess.

    Pour into the molds. Let set up in fridge and sit for 2 hours.

    Remove carefully (the smaller the mold, the more it likes to stay in the corners). Decorate with frosting and red candies Make sure to pat away any moisture before you decorate.

    *If you can not find Gingerbread Syrup you can make your own. Take 1 cup water, 1 cup sugar, and a 1/4 cup chopped fresh ginger. Heat in a saucepan until the sugar dissolves and it comes to a boil. Strain out ginger pieces.

  • Forget the cookie exchange this year… host a jelly shot exchange instead.

    Of course everyone would need to stay the night, but it would definitely be fun! And exchange would be complete without gingerbread, so why not make Gingerbread Men Jelly Shots? After all, I don’t think there is a more retro/iconic holiday cookie than that of the gingerbread man.

    If you can find gingerbread flavored liqueur, you are golden... I couldn’t find it, though people told me it does exist. I ended up using gingerbread-flavored syrup – the kind they use to make gingerbread lattes. If you can’t find the syrup, the recipe also includes how to make ginger syrup.

    Throw in a little molasses, if you like. My taste testers vetoed that idea as I had some gingerbread haters in the group…though they all happily ate the jelly shots.

    To make the shots:

    Add some spice to your party or gathering by creating a beloved cookie into a jelly shot. Hopefully he won’t jump off the table and say, "You can’t catch me, I’m the gingerbread man!"
