Grilled Summer Vegetables with Fresh Garlic

Ingredients

cup olive oil

teaspoon salt

teaspoon pepper

small eggplant, cut into 1/4-inch slices
1
lb fresh asparagus spears, trimmed
1
medium summer squash, cut into 1/4-inch slices
1
medium red onion, cut into 1/2-inch slices
1
large yellow or red bell pepper, cut into fourths
4
cloves garlic, peeled, thinly sliced

    Heat gas or charcoal grill. In small bowl, mix olive oil, salt and pepper. Brush vegetables with olive oil mixture; toss with garlic slices. Place vegetables in grill basket.

    Place basket on grill over medium heat. Cover grill; cook 15 to 20 minutes, stirring occasionally, until vegetables are crisp-tender. Serve warm.
