Traditional Hawaiian Kalua pork is cooked in an underground oven or sand pit. Less traditional recipes use a slow cooker to cook the pork all day long. Unfortunately, we often find ourselves short on time and underground ovens. The solution: Instant Pot™ Kalua Pork. It will have you on your way to the party in way less time and with way less hassle.

Ingredients

  • 1 boneless pork shoulder roast (3 1/2 to 4 lb), trimmed, and cut in 3 pieces
  • 1 3/4 teaspoons sea salt
  • 6 slices bacon, chopped
  • 1 cup Progresso™ chicken broth (from 32-oz carton)
  • 1 package (10 oz) shredded cabbage (about 4 cups)
  • 1/4 cup sliced green onions
  • 3/4 cup diced fresh pineapple
  • 3 tablespoons fresh lime juice
  • 1 tablespoon honey
  • 1 teaspoon oil
  • 1/4 teaspoon crushed red pepper flakes
  • 24 King's Hawaiian™ original sweet dinner rolls (2 packages)

Steps

    Season pork pieces with 1 1/2 teaspoons of the sea salt. Set aside.

    On 6-quart Instant Pot™, select SAUTE; adjust to normal. Add bacon; cook 3 to 4 minutes or until soft, and push to side of insert. Add pork; sear 3 to 5 minutes on all sides or until browned. Select CANCEL.

    Pour broth over pork in insert. Secure lid; set pressure valve to SEALING. Select MANUAL; cook on high pressure 90 minutes. Select CANCEL. Keep pressure valve in SEALING position to release pressure naturally.

    When cool enough to handle, shred pork and chop bacon. Toss with 1 1/2 cups of the cooking liquid; discard remaining cooking liquid.

    Meanwhile, in medium bowl, toss cabbage, green onions, pineapple, lime juice, honey, oil, pepper flakes and remaining 1/4 teaspoon sea salt with tongs to completely combine.

    To serve, divide pork among rolls; top with slaw.

    Naturally releasing pressure allows the pork to cook longer and become even more tender as it cools.

    For best flavor, allow the pork to get quite brown on all sides while sautéing.
