And then being lightly crisped in a sauté pan until you're golden brown with comfort and joy for my mouth? Why, thank you. And then being slid into a sliced warm dinner roll and topped with a bright cranberry sauce drizzle? Let's run away together. No, I'm serious. Get your kids to make these. Tiiiiiiime of their lives. (That way you can concentrate on that Bloody Mary*, I mean, am I right?)

Leftover Thanksgiving Turkey Tater Sliders

Ingredients

  • 2 cups leftover mashed potatoes
  • 2 cups leftover chopped turkey
  • 1 cup cranberry sauce
  • 1 sprig fresh thyme
  • 1 sprig fresh oregano
  • 10 whole wheat dinner rolls, halved and toasted
  • 1 pinch coarse salt and freshly ground pepper

    Begin by gathering your leftovers and other ingredients.

    In a large bowl, combine the mashed potatoes, chopped turkey, thyme, oregano, and a pinch of salt and pepper.

    Mash until fully combined. Using your hands, form little balls with the mixture.

    Heat a 1 tbsp. of extra-virgin olive oil in a large skillet. Carefully arrange the turkey potato balls in the pan and sear on all sides until browned and crispy, about 7 minutes.

    Place each ball on a toasted wheat bun and drizzle with the cranberry sauce. Serve sliders immediately.
