Lemon Sugar Shortcake Bites

Who needs a whole shortcake when you can eat teeny bites on a toothpick? This quick and easy recipe makes quick work of a classic treat, in delicious bite-sized form for brunch!

Ingredients

  • 1 can (16.3 oz) refrigerated Pillsbury™ Grands!™ Flaky Layers Original Biscuits (8 Count)
  • Juice and zest of 1 lemon
  • 1/2 cup coarse sugar
  • 1 cup sliced strawberries
  • 1 cup Yoplait® Original vanilla yogurt

Steps

    Preheat oven to 400° F. Cover a large baking sheet with parchment paper.

    Open biscuits and slice each round into 4 wedges. Drizzle with lemon juice and roll in sugar and lemon zest. Bake for 8-12 minutes, or until golden brown. Remove and cool, then slice each in half (like a sandwich).

    Spoon a small dollop of yogurt and place 1-2 strawberry slices in the center of each bite. Replace the top of the biscuit piece with a toothpick to hold everything in place. Place on a serving platter and enjoy!
