Perfect Pumpkin Bars

Traditional and expected each fall, these pumpkin bars are perfect in every way -- from the spicy cake to the creamy sweet frosting.

Ingredients

  • 1 and 2/3 cups sugar
  • 2 cups pumpkin
  • 1 cup oil
  • 4 large eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon soda
  • 2 teaspoons cinnamon
  • 1/4 teaspoons cloves
  • 1/4 teaspoons ginger
  • 2 cups flour
  • Cream cheese frosting (below)
  • Candy pumpkins for garnish, if desired

Steps

    Preheat oven to 350° F. Spray 15x11 pan with baking spray.
  • 2
    Beat sugar, pumpkin and oil. Add eggs, beating after each. Add baking powder, salt and soda and mix well. Add flour and beat until well blended.

    Bake at 350° F for 20 - 25 minutes. Check with toothpick for doneness. Cool completely on cooling rack before frosting.

    CREAM CHEESE FROSTING: Beat 8 oz. softened cream cheese, 1/2 cup softened butter, and 2 cups powdered sugar on high speed until well blended and smooth. Add vanilla. Spread immediately on cooled pumpkin bars.
