Juicy watermelon and blueberries, sweet basil and salty feta come together in this easy, tasty no-bake appetizer.

Ingredients

  • 2 packages (8 oz) chunk feta cheese
  • 1 small watermelon
  • 48 blueberries
  • 24 toothpicks
  • 48 fresh basil leaves

Steps

    Use a melon baller or small cookie scoop to carefully scoop about 24 (1-inch) balls of feta cheese from each block/chunk.
  • 2
    Use a clean melon baller to scoop approximately 48 (1-inch) balls from the watermelon.
  • 3
    Skewer a blueberry on the end of each toothpick, then add a watermelon ball. Skewer a folded or rolled-up whole basil leaf (or part of a larger basil leaf), then a feta ball. Add another basil leaf, another watermelon ball and another blueberry. Repeat with each toothpick. Serve immediately.

  • Cute, easy and 4th of July ready. Drop everything. Stop doing whatever you’re doing and make these Red, White and Blue Bites. It’s that important because these babies are BOMB. They’re also insanely easy to make. Like, I feel silly even giving you a recipe for this. But I will, because there is a method to the skewering. There is not, however, a method to eating them. Unless you count shoveling as a method—because that’s the route I took straight to my mouth when I made these refreshing, easy, no-bake appetizers. In addition to shoveling in one’s mouth, they also happen to be great for summer outdoor food festivities such as picnics and potlucks and gatherings around the campfire singing “Kumbaya” – if that’s a thing you do. Ahem. To start, you’ll need a couple of blocks of salty feta cheese. Use a melon baller or a very small cookie scoop to scoop out 1-inch balls of feta from the blocks. These are so patriotic and fun and easy and tasty and refreshing and sweet and salty and flavorful and really, I could go on and on about them but I think it’s in all of our best interests at this point to do as I said before… Drop everything and make these bomb bites! Eating them whilst singing “Kumbaya” is optional. Perhaps the Pledge of Allegiance is better?
