This recipe calls for Korean chili powder, which can be purchased from Asian grocery stores. Don't be afraid of the color, it's not as spicy as you might think!

Ingredients

  • 1/4 cup peanuts, roasted & salted (if desired)
  • 4 eggs, poached or fried
  • 1/2 cup green onions, chopped
  • 1 tablespoon creamy peanut butter
  • 1 clove garlic, chopped
  • 1 1/2 tablespoons soy sauce
  • 1 tablespoon Korean chili powder
  • 2 packets (12 ounce) frozen buttery rice & vegetables

Steps

    Add buttery rice & vegetables packet, chili powder, soy sauce, garlic, and peanut butter to a large skillet. Heat over medium-high heat, stirring until the veggies are thawed and warm.

    Remove from heat, stir in the green onions.

    Serve topped with fried or poached eggs, and sprinkled with peanuts (optional). Enjoy!
