lb ground beef (at least 80% lean)

cup finely chopped onions

medium carrot, cut in half lengthwise and thinly sliced (about 2/3 cup)

medium green bell pepper, coarsely chopped (about 1 1/3 cups)

medium orange or yellow bell pepper, coarsely chopped (about 1 1/3 cups)

can (14.5 oz) Muir Glen™ organic diced tomatoes, undrained
1
can (15 oz) Muir Glen™ organic tomato sauce
1
carton (32 oz) Progresso™ chicken broth
1
tablespoon Montreal steak seasoning
1
teaspoon sugar

cup uncooked instant white rice
1
cup shredded white Cheddar cheese (4 oz)

tablespoons finely chopped fresh parsley

    Spray 5-quart slow cooker with cooking spray.

    Add beef and onions to 10-inch skillet, breaking beef into small pieces. Cook over medium-high heat 7 to 9 minutes, stirring frequently, until beef is brown; drain. Add beef mixture to slow cooker with carrot, bell peppers, tomatoes, tomato sauce, broth, seasoning and sugar; stir to combine. Cover; cook on High heat setting 2 to 2 1/2 hours or until vegetables are crisp-tender. Stir in rice; cover, and cook about 20 minutes longer or until soft.

    Ladle into serving bowls; top with cheese and parsley.

Expert Tips

  • Montreal seasoning can be found with the other spices in the baking section of the grocery store. It is a salt and pepper mixture with other herbs and spices added.
  • Since instant rice is precooked, it's the best option when adding rice to this slow-cooker recipe.
  • Use a combination of red, yellow, orange and green bell peppers for variation in color and flavor.
