Ingredients

packet Pillsbury™ Ready To Bake!™ sugar cookies
6
ounces cream cheese, softened
1
container (5.3 ounce) Yoplait® Greek 100 protein vanilla yogurt
1
package (9 ounce) candy lemon drops
1/2
cup fresh raspberries
1/2
cup fresh blueberries
1
teaspoon lemon zest

    Preheat oven to 350°F.
  • 2
    Place one sugar cookie in each of 24 cups in a nonstick mini muffin tin. Bake for 10-14 minutes, or until the edges of the cookies are slightly browned. Remove and cool completely before twisting each cup gently from the tin.

    Put lemon drop candies in a blender and blend until reduced to a fine lemon-drop sugar.

    In a large bowl or stand mixer, beat together the cream cheese, yogurt, and all but 1/4 cup of the lemon-drop sugar until light and fluffy.

    Spoon lemon cream cheese filling into the center of each cup. (Or, pipe using a pastry bag fitted with a large, star tip for more decorative flair). Decorate each cup with fresh berries. Serve immediately, or refrigerate up to 8 hours. Enjoy!

A cross between a cookie and a pie, these beautiful little cookie cups are filled with Lemon Drop-flavored Greek yogurt mousse.

Yep. We just said that. LEMON DROP FLAVORED GREEK YOGURT MOUSSE. Roll it around in your mouth, cutie pie. Because it's about to get all sorts of summery up in here.

Here's what you need to make these magical little cookie morsels. Look for lemon drops in the candy section of most grocers and drugstores. They shouldn't be too hard to find!

Now, you're about to create the magic of this recipe….homemade lemon sugar. Just pop your lemon drops in a blender and blend until powdery.

Now prep your cookie cups by plopping Pillsbury Ready-to-Bake Sugar Cookies into a mini muffin tin.

Whilst your cookie bites are baking, prep your filling. A little lemon sugar. A lot of Greek yogurt and cream cheese. You have whipped together such a nice life for yourself.

Once your cookie cups are cooked, and completely cooled, fill them with your lemony mousse mixture, and decorate with fresh berries and crushed lemon drops. Put your hand over your heart….
